Bison Steak Strips, Flank and Skirt; at least 16oz.
These are absolutely fantastic on the grill. Turn the heat up as high as it will go and wait for the grill to get up to temp. Throw the steak strips on the grill with a little salt and pepper for 2 - 3 minutes, and you're left with super tender, seared strips of sweet bison. You can just pull them apart with your fork. They made a fantastic appetizer. They also excel in the wok as a bison stir fry, or with a Chipolte marinade for fajitas.
